China is the biggest fresh ginger producer in the world

Regarding the market share, China accounts for about 35% share of the global fresh ginger trade. India follows with roughly 22%, while other exporters such as Nigeria, Thailand, and Indonesia account for single-digit shares.

Below are some top destinations for Chinese fresh ginger:

North America: The United States and Canada demand up to 120,000 tonnes annually for foodservice, retail, and supplement manufacturers.

Europe: Key importers such as the Netherlands, Germany, and the United Kingdom collectively take over 100,000 tonnes, driven by strong retail and processing usage.

Asia-Pacific: Japan, South Korea, and Southeast Asian nations absorb roughly 80,000 tonnes, favoring Chinese ginger for its consistent quality.

Middle East & Africa: Emerging markets in the Middle East and North Africa import an estimated 50,000 tonnes, using ginger in local cuisines and herbal remedies.

China’s fresh ginger is cultivated across several provinces, each contributing unique advantages:

Shandong: The largest ginger-producing province, renowned for sandy loam soils and moderate rainfall. Yields high-fiber, robust-flavored roots ideal for processing and export.

Sichuan: Mountainous terrain and subtropical climate produce ginger with thinner skin and a slightly sweeter aroma.

Hebei & Henan: Central plains regions specializing in large-knuckled varieties that ship well and resist bruising.

Yunnan & Guangxi: Southwest provinces known for “baby ginger”—young, tender shoots with minimal fiber and a mild, floral kick.
